Hello! If you've ever wanted a drink that cools you from the inside out and feels like a short vacation, this Cucumber Lime Agua Fresca is your answer.

With just cucumber, lime, and a touch of natural sweetness, it's a bright, thirst-quenching beverage that comes together in ten minutes and scales effortlessly for a crowd.

What Makes Agua Fresca Special

Agua fresca, literally "fresh water," is a traditional blended beverage from Mexico and parts of Central America, built around water, a fruit or vegetal base, and gentle sweetening. Unlike heavy smoothies, it's light, hydrating, and built to refresh—perfect for hot afternoons, post-workout sipping, or pairing with spicy foods.

This version leans on cucumber's cooling, mild flavor, lime's zesty brightness, and a whisper of sweetness to deliver clean, crisp hydration. Beyond taste, you're getting vitamin C from lime, high water content and electrolytes from cucumber, and optional mint for a soothing digestive lift.

Registered dietitian nutritionist Krista Linares, MPH, RDN, emphasizes: "Agua fresca offers a delicious, hydrating option that delivers important nutrients such as vitamin C and antioxidants from fruit, while providing hydration without the excess sugars found in many commercial drinks. It's a wonderful way to enjoy fresh, seasonal flavors with minimal processing."

Ingredients

- 3 cups cold filtered water

- 2 medium cucumbers, roughly chopped (about 4 cups chopped; no need to peel unless the skin tastes bitter—rinse and scrub well)

- Juice of 3 medium limes (about 1/4 cup or 60 ml, freshly squeezed)

- 2 to 3 tablespoons agave nectar or pure maple syrup (start with 2 and add more if you prefer sweeter)

- Small handful fresh mint leaves (optional but recommended; roughly 15–20 leaves)

- Ice cubes, for serving

Preparation

1. Taste and prep cucumbers: Cut a small piece of cucumber and taste the skin. If it’s pleasant and not overly bitter, leave the peel on for color and nutrients. Otherwise, lightly peel before chopping. Roughly chop the two cucumbers into large chunks so the blender can process them easily.

2. Juice the limes: Roll each lime on the countertop with firm pressure to release more juice, then cut and squeeze to yield about 1/4 cup. Strain out seeds if needed.

3. Measure sweetener and mint: Start with 2 tablespoons of agave or maple syrup; you can adjust later. Pick the mint leaves, rinse gently, and lightly bruise them by clapping between your palms or muddling slightly to release aroma.

Blend & Strain

1. Combine the chopped cucumber, lime juice, sweetener, mint leaves (if using), and cold water in a blender.

2. Blend on high until the mixture is uniformly smooth—about 30 to 45 seconds depending on your blender's power.

3. Pour the mixture through a fine-mesh strainer or chinois into a large pitcher or bowl, using the back of a spoon to press and extract as much liquid as possible while leaving behind the fibrous pulp. (If you like a bit more body, skip straining entirely.)

4. Taste and tweak: add another teaspoon or two of agave/maple if you want sweeter, or squeeze in extra lime for a brighter tang.

Serve & Store

- Fill glasses with ice cubes and pour the agua fresca over the top, garnishing each with a thin cucumber wheel or a sprig of mint for presentation.

- For an extra-refreshing touch, chill the mixture in the fridge for 15 minutes before serving so it's icy without diluting.

- Leftovers keep in a sealed pitcher or jar in the refrigerator for 1 to 2 days. You can also pour the agua fresca into ice cube trays or popsicle molds and freeze for icy additions or frozen treats.

Variations & Tips

- Herb swap: If mint isn't on hand, basil leaves (3–4 small leaves) or a sliver of fresh ginger add a different aromatic twist.

- Sparkling version: Replace 1 cup of still water with chilled sparkling water just before serving for a lively fizz.

- Fruit boost: Stir in a handful of diced watermelon or a few frozen berries during blending for a layered flavor without overpowering the cucumber-lime base.

- No sweetener: Skip the syrup entirely for a very light, savory refresher; a pinch of sea salt can enhance the vegetal notes and hydration feel.

- Batch scaling: Multiply quantities by 4 to serve a party—blend in batches if your blender capacity is limited, then combine and chill.

Health Highlights

This drink is mostly water, making it excellent for hydration; cucumber provides electrolytes and anti-inflammatory antioxidants, while lime delivers vitamin C and a natural lift.

Using agave or pure maple syrup keeps added sweetness unrefined (adjust based on dietary preferences), and mint, when included, supports digestion and adds a cooling sensation beyond temperature alone.
